- 4 oz whole milk dark chocolate (chopped)
- ½ cup heavy cream
- 1.5 quarts neutral oil (for frying)

Mix flour with 2 tbsp sugar, a pinch of salt, and 1 tsp cinnamon in a bowl. Add 1 cup boiling water slowly, stirring until a thick paste forms.

Heat oil in a heavy pot to 375°F (use a thermometer). Transfer dough to a churrera or piping bag fitted with a large star tip.

Carefully pipe 4-inch lengths of dough directly into hot oil in batches—they'll float and brown in 1.5-2 minutes per side.

Remove churros with a slotted spoon and drain on paper towels. Toss immediately with remaining 1 tbsp sugar and 0.5 tsp cinnamon.
