Ingredients
- 1 cup water
- 1 cup all-purpose flour
- 2 tbsp butter
- 2 tbsp sugar
- 4 oz dark chocolate
- ½ cup heavy cream

In a medium saucepan, combine 1 cup water, 2 tbsp butter, and 1 tbsp sugar. Bring to a boil over high heat, then remove from heat and stir in 1 cup flour until a smooth dough forms.

Heat 1 inch of oil in a deep skillet over medium-high until shimmering (about 350°F). Transfer dough to a piping bag with a star tip and pipe 4-inch strips directly into the hot oil, cutting with scissors.

Fry churros in batches, turning occasionally, until golden brown and crisp, about 2-3 minutes per batch. Drain on paper towels and toss with remaining 1 tbsp sugar.

In a small saucepan, heat 1/2 cup heavy cream over medium until steaming. Remove from heat, add 4 oz chopped dark chocolate, and stir until smooth and glossy.
