Ingredients
- 8 oz chow mein noodles
- 1 lb chicken breast
- 2 medium carrot
- 1 medium onion
- 3 tbsp soy sauce
- 2 tbsp vegetable oil

Cook the 8 oz chow mein noodles according to package directions until just tender, about 4-5 minutes. Drain and set aside.

Thinly slice the 1 lb chicken breast, 2 medium carrots, and 1 medium onion. Heat 1 tbsp of the 2 tbsp vegetable oil in a large skillet or wok over high heat.

Add the chicken and stir-fry until golden and cooked through, about 5-6 minutes. Remove from the skillet and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the carrots and onion and stir-fry until crisp-tender, about 3-4 minutes.

Return the chicken to the skillet. Add the cooked noodles and 3 tbsp soy sauce. Toss everything together over high heat for 1-2 minutes until well coated and heated through. Serve hot.
