Ingredients

  • 8 oz chow mein noodles
  • 2 tbsp vegetable oil
  • 3 cups mixed vegetables (e.g., bell pepper, carrot, cabbage)
  • 3 tbsp soy sauce
  • 2 cloves garlic

Instructions

  1. 1

Cook the 8 oz chow mein noodles according to package directions until al dente, about 4-5 minutes. Drain and rinse with cold water to stop cooking.

  2. 2

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add 2 minced garlic cloves and stir-fry until fragrant, about 30 seconds.

  3. 3

Add 3 cups mixed vegetables and stir-fry until crisp-tender, about 3-4 minutes. They should be bright and slightly crunchy.
