Ingredients

  • ½ lb chorizo sausage
  • 6 count corn tortillas
  • ¼ medium white onion
  • ¼ cup fresh cilantro
  • 1 count lime
  • 1 count avocado
  • ½ cup salsa verde

Instructions

    Dice the onion into small pieces and roughly chop the cilantro. Cut the avocado in half, remove the pit, and slice.

    Remove the chorizo from its casing and break into crumbles.

    Heat a 10-inch cast iron skillet over medium-high heat. Add the chorizo and cook for 5-7 minutes, breaking it apart with a spoon, until browned and crispy.

    Warm the tortillas in a dry skillet or directly over a gas flame for 30 seconds per side until pliable.

    Place a spoonful of chorizo on each warm tortilla. Top with diced onion, avocado slices, cilantro, and a dollop of salsa verde.
