Ingredients
- 200 g dark chocolate
- 300 ml heavy cream
- 3 eggs
- 2 tbsp sugar
- 1 tbsp cocoa powder
- 30 g white chocolate
- 2 tbsp almonds

Melt the 200g dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.

Separate the 3 eggs, placing yolks in a large bowl and whites in a clean bowl. Beat the yolks with the 2 tbsp sugar until pale and thick, about 2 minutes.

Whip 200ml of the heavy cream to soft peaks. In another bowl, beat the egg whites to stiff peaks.

Fold the melted chocolate into the yolk mixture, then gently fold in the whipped cream and egg whites until just combined, keeping it airy.

Divide the mousse into 4 serving glasses and refrigerate for at least 2 hours until set.

Before serving, whip the remaining 100ml cream to soft peaks. Top each mousse with a dollop of cream, dust with the 1 tbsp cocoa powder, and sprinkle with the 30g white chocolate shavings and 2 tbsp crushed almonds.
