Chinese Scallion Pancake

Ingredients
- 2 cups all-purpose flour
- ¾ cup water
- 4 stalks scallions
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1 large egg

In a large bowl, mix 2 cups flour and 1/2 tsp salt. Gradually add 3/4 cup water, stirring until a shaggy dough forms, about 2 minutes.

Knead the dough on a floured surface until smooth and elastic, about 5 minutes. Cover and rest for 15 minutes.

Thinly slice 4 scallions, separating white and green parts. In a small bowl, beat 1 egg with a pinch of salt.

Divide dough into 4 pieces. Roll each into a thin rectangle, brush with 1 tbsp oil, sprinkle with scallions and a pinch of salt. Roll up tightly into a spiral, then flatten.

Roll each spiral into a 6-inch round pancake. Heat 2 tbsp oil in a skillet over medium-high.

Cook each pancake for 2-3 minutes per side, until golden and crispy. Brush the top with beaten egg during the last minute of cooking.
