Ingredients
- 6 oz somen noodles (dried)
- 1 cup dashi stock or water
- 3 tbsp soy sauce
- 1.5 tbsp mirin
- ¼ cup pickled ginger (gari)
- ¾ cup fresh snap peas

Bring a pot of salted water to boil. Add somen noodles and cook until just tender, ~3 minutes.

Drain noodles and rinse under ice-cold water until completely cool, stirring gently with chopsticks.

Stir dashi, soy sauce, and mirin in a bowl until sugar dissolves. Divide between two small dipping bowls.
