Chilaquiles

A quick and satisfying Mexican breakfast of crispy tortilla chips simmered in salsa, topped with a fried egg, cheese, and green onions.

Ingredients

  • 4 cups tortilla chips
  • 1.5 cups salsa
  • 2 large eggs
  • ½ cup shredded cheese
  • 2 medium green onions
  • 1 tbsp olive oil

Instructions

    Heat 1 tbsp olive oil in a large skillet over medium heat. Add 1.5 cups salsa and cook until bubbling, about 2 minutes.

    Stir in 4 cups tortilla chips, coating them with salsa. Cook for 2-3 minutes until chips are slightly softened but still crunchy.

    In a separate nonstick skillet, fry 2 eggs over medium heat until whites are set and yolks are runny, about 3 minutes.

    Divide the chilaquiles between two plates. Top each with a fried egg, 1/4 cup shredded cheese, and sliced green onions. Serve immediately.
