Ingredients

  • 1 lb chicken breast
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 red bell pepper
  • 2 stalks celery
  • 1 onion

Instructions

    Slice the 1 lb chicken breast into thin strips. In a small bowl, mix 3 tbsp soy sauce with 2 tbsp water; set aside.

    Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken and cook, stirring, until browned and cooked through, about 5-6 minutes. Remove to a plate.

    Add the remaining 1 tbsp oil to the skillet. Add the sliced onion, 2 celery stalks (cut into 1/2-inch pieces), and 1 red bell pepper (sliced). Stir-fry until crisp-tender, about 4-5 minutes.

    Return the chicken to the skillet. Pour in the soy sauce mixture and stir-fry for 1-2 minutes until everything is coated and the sauce thickens slightly. Serve hot.
