- 1 lb chicken breast
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 red bell pepper
- 2 stalks celery
- 1 onion

Slice the 1 lb chicken breast into thin strips. In a small bowl, mix 3 tbsp soy sauce with 2 tbsp water; set aside.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken and cook, stirring, until browned and cooked through, about 5-6 minutes. Remove to a plate.

Add the remaining 1 tbsp oil to the skillet. Add the sliced onion, 2 celery stalks (cut into 1/2-inch pieces), and 1 red bell pepper (sliced). Stir-fry until crisp-tender, about 4-5 minutes.
