Ingredients

  • 1 lb chicken skin
  • ¼ cup soy sauce
  • ¼ cup mirin
  • 2 tbsp sake
  • 1 tbsp sugar
  • 2 stalks green onions

Instructions

    Cut the 1 lb chicken skin into 1-inch wide strips and thread onto skewers, weaving the skin accordion-style. Pat dry with paper towels.

    In a small saucepan, combine 1/4 cup soy sauce, 1/4 cup mirin, 2 tbsp sake, and 1 tbsp sugar. Simmer over medium heat until slightly thickened, about 5 minutes. Set aside.

    Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for 3-4 minutes per side, until the skin is golden and crispy.

    Brush the skewers generously with the yakitori sauce and continue grilling for 1-2 minutes per side, until the sauce caramelizes and the skin is charred at the edges.
