- ¼ cup mirin
- 2 tbsp sake
- 1 tbsp sugar
- 2 stalks green onions

Cut the 1 lb chicken skin into 1-inch wide strips and thread onto skewers, weaving the skin accordion-style. Pat dry with paper towels.

In a small saucepan, combine 1/4 cup soy sauce, 1/4 cup mirin, 2 tbsp sake, and 1 tbsp sugar. Simmer over medium heat until slightly thickened, about 5 minutes. Set aside.
