Ingredients
- 1 whole (about 3 cups) rotisserie chicken, shredded
- 2 cups yellow rice, cooked
- 4 pieces pita bread
- 3 cloves garlic, minced
- 1 tsp each paprika, cumin, and cayenne (mixed)
- ¾ cup hummus
- 2 tbsp fresh lemon juice
- 2 cups mixed cherry tomatoes, halved; cucumber, diced; parsley (for tabbouleh or salad)

Heat 2 tbsp olive oil in a skillet over medium-high. Add minced garlic and cook for 30 seconds until fragrant.
