Ingredients
- 2 4-oz fillets chicken breast
- ⅓ cup all-purpose flour
- 1 large egg
- ¾ cup panko breadcrumbs
- 1 cup marinara sauce
- ¾ cup mozzarella cheese, shredded

Preheat oven to 400°F. Line a baking sheet with foil.

Pound chicken to 1/2-inch thickness between plastic wrap using a meat mallet or heavy pan.

Set up three shallow bowls: flour in one, beaten egg in the second, panko mixed with salt and pepper in the third.

Coat each chicken breast in flour, shaking off excess. Dip in egg, then press into panko until fully coated.

Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, ~90 seconds.

Sear chicken 3 minutes per side without moving until golden brown. Transfer to the prepared baking sheet.

Spoon 2 tbsp marinara over each chicken breast. Top with 3 tbsp mozzarella per piece.
