- 1 cup milk (dairy or plant-based)
- 1 tablespoon maple syrup or honey
- ½ teaspoon vanilla extract
- 1 cup strawberries
- ½ cup granola

In a bowl or jar, whisk together the 1/4 cup chia seeds, 1 cup milk, 1 tbsp maple syrup or honey, and 1/2 tsp vanilla extract until well combined.

Let the mixture sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight, until the pudding is thick and creamy.

While the pudding chills, hull and slice the 1 cup strawberries into thin pieces.

When ready to serve, stir the pudding well; it should be thick and spoonable. If too thick, add a splash of milk to loosen.

Divide the pudding between two bowls or glasses. Top each with half of the sliced strawberries and 1/4 cup granola per serving. Serve immediately.
