Ingredients

  • 1.5 cups pre-cooked pulled pork
  • ¾ cup shredded cheddar or queso de mano
  • 1 cup arepa flour (masa harina)
  • 1.25 cups warm water
  • 1 whole avocado
  • 1 tbsp fresh lime juice
  • ½ cup salsa (red or green)

Instructions

    Warm pulled pork in a skillet over medium heat, stirring occasionally, about 4 minutes.

    Mix arepa flour, warm water, and a pinch of salt until the dough comes together, then rest 5 minutes.

    Divide dough into 4 balls, flatten each into a thin disk, stuff with pork and cheese, then seal edges shut.

    Heat 2 tbsp oil in the skillet over medium-high until shimmering, then pan-fry arepas 4 minutes per side until golden brown.

    Slice avocado, toss with lime juice and a pinch of salt.

    Split arepas open, fill with warm pork mixture, top with avocado and salsa, then serve immediately.
