Ingredients
- 8 small flour tortillas
- 2 cups shredded cheese (like cheddar or Monterey Jack)
- 1 large, diced tomato
- 1 small, finely chopped onion
- 1 cup salsa
- 8 leaves fresh basil leaves
- 1 tbsp olive oil

Heat 1 tbsp olive oil in a large skillet over medium heat. Place 1 tortilla in the pan and sprinkle 1/4 cup cheese over half of it.

Fold the tortilla over the cheese and press gently. Cook until golden and crisp, about 2 minutes per side, then transfer to a plate. Repeat with remaining tortillas and cheese.

In a small bowl, combine the diced tomato and chopped onion. Season with a pinch of salt and pepper if you like.

Top each taco with a spoonful of the tomato-onion mixture and a drizzle of salsa.
