Cheese Tacos

Crispy tortillas filled with melted cheese, topped with fresh tomato, onion, and salsa. A quick and satisfying weeknight meal.

Ingredients

  • 8 small flour tortillas
  • 2 cups shredded cheese (like cheddar or Monterey Jack)
  • 1 large, diced tomato
  • 1 small, finely chopped onion
  • 1 cup salsa
  • 8 leaves fresh basil leaves
  • 1 tbsp olive oil

Instructions

    Heat 1 tbsp olive oil in a large skillet over medium heat. Place 1 tortilla in the pan and sprinkle 1/4 cup cheese over half of it.

    Fold the tortilla over the cheese and press gently. Cook until golden and crisp, about 2 minutes per side, then transfer to a plate. Repeat with remaining tortillas and cheese.

    In a small bowl, combine the diced tomato and chopped onion. Season with a pinch of salt and pepper if you like.

    Top each taco with a spoonful of the tomato-onion mixture and a drizzle of salsa.

    Garnish each taco with a fresh basil leaf and serve warm.
