- 1 cup shredded mozzarella cheese
- 2 tbsp water
- 2 tbsp oil

Lightly wet both sides of each papadum with water using your hands or a brush – this makes them pliable.

Place 1/4 cup of shredded mozzarella on one half of each papadum, leaving a small border.

Heat 2 tbsp oil in a skillet over medium heat. Cook the stuffed papadums for 2-3 minutes per side until golden and crisp, and the cheese is melted.
