Ingredients

  • 1 lb pork shoulder or butt, thinly sliced
  • 3 tbsp fish sauce
  • 1 whole lime (zested and juiced)
  • 1 tbsp granulated sugar
  • 8 oz fresh rice noodles (or dried, cooked)
  • 1 cup fresh herbs (cilantro, mint, Thai basil), chopped
  • 1 whole cucumber, thinly sliced

Instructions

    Combine fish sauce, lime juice, lime zest, sugar, and 2 tbsp water in a bowl. Stir until sugar dissolves. Set the dressing aside.

    Heat a large skillet or grill pan over high heat until it shimmers. Work in batches and sear pork slices 2–3 minutes per side until charred at edges.

    While pork cooks, boil rice noodles in salted water until tender, about 4–5 minutes. Drain well.

    Divide noodles between two bowls. Top with charred pork, cucumber slices, and fresh herbs.
