Charred Grilled Cabbage

Ingredients

  • 1 head (about 2 lbs) cabbage, green or purple
  • 2 tbsp olive oil
  • ½ tsp salt

Instructions

    Heat grill to medium-high (about 400°F) or preheat a grill pan over medium-high heat.

    Cut cabbage into 4 wedges, keeping the core intact so each wedge stays together.

    Brush both sides of each wedge generously with olive oil and sprinkle with salt.

    Place wedges cut-side down on the grill and cook without moving until deeply charred, 4–5 minutes.

    Flip wedges and char the other cut side for another 3–4 minutes until edges blacken.

    Transfer to a plate and serve immediately; the char crisps up as it cools.
