Ingredients
- 1 head (about 2 lbs) cabbage, green or purple
- 2 tbsp olive oil
- ½ tsp salt

Heat grill to medium-high (about 400°F) or preheat a grill pan over medium-high heat.

Cut cabbage into 4 wedges, keeping the core intact so each wedge stays together.

Brush both sides of each wedge generously with olive oil and sprinkle with salt.

Place wedges cut-side down on the grill and cook without moving until deeply charred, 4–5 minutes.

Flip wedges and char the other cut side for another 3–4 minutes until edges blacken.
