Ingredients

  • 8 pieces (about 2.5 lbs) chicken thighs, bone-in and skin-on
  • 1 large orange, zested and juiced
  • 2 whole lime, zested and juiced
  • 6 cloves garlic, minced
  • 1.5 tsp cumin
  • 3 tbsp olive oil

Instructions

  1. 1

Pat chicken dry with paper towels. Season all over with salt, pepper, and cumin.

  2. 2

Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

  3. 3

Sear chicken skin-side down without moving until golden and crispy, 5 minutes. Flip and sear 3 minutes.

  4. 4

Add minced garlic to the pan, stir constantly for 30 seconds until fragrant.

  5. 5

Pour in orange and lime juices. Scrape up browned bits. Reduce heat to low, cover, and cook 4 minutes.

  6. 6

Uncover, increase heat to high, and let sauce reduce and glaze the chicken for 1 minute. Serve.

Tools you’ll need

  • 12-inch skillet with lid
  • paper towels
  • wooden spoon or spatula
