Ingredients

  • 1 lb beef sirloin or chuck, cut into 1.5-inch cubes
  • 3 tbsp tahini
  • 3 clove garlic, minced
  • 1 tsp ground cumin
  • ½ tsp paprika
  • 1 whole lemon (juiced + zested)
  • 1.5 cups cooked white or brown rice (or warm it while meat cooks)

Instructions

  1. 1

Toss beef cubes with 2 tbsp tahini, minced garlic, cumin, paprika, lemon zest, salt, and pepper in a bowl.

  2. 2

Heat 2 tbsp oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Working in batches if needed, sear beef cubes 2–3 minutes per side without stirring until edges char deeply.

  4. 4

Pour lemon juice over the beef, scrape up any charred bits, and toss once.

  5. 5

Whisk remaining 1 tbsp tahini with 2–3 tbsp warm water and a pinch of salt until pourable.

  6. 6

Divide rice between plates, top with charred beef, and drizzle tahini sauce over.
