Ingredients
- 1 lb beef sirloin or chuck, cut into 1.5-inch cubes
- 3 tbsp tahini
- 3 clove garlic, minced
- 1 tsp ground cumin
- ½ tsp paprika
- 1 whole lemon (juiced + zested)
- 1.5 cups cooked white or brown rice (or warm it while meat cooks)

Toss beef cubes with 2 tbsp tahini, minced garlic, cumin, paprika, lemon zest, salt, and pepper in a bowl.

Heat 2 tbsp oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

Working in batches if needed, sear beef cubes 2–3 minutes per side without stirring until edges char deeply.

Pour lemon juice over the beef, scrape up any charred bits, and toss once.

Whisk remaining 1 tbsp tahini with 2–3 tbsp warm water and a pinch of salt until pourable.
