Ingredients
- 1 lb ground beef
- 2 medium bell peppers (red or yellow), cut into 1-inch pieces
- 1 medium red onion, cut into 1-inch chunks
- ¼ cup tahini
- 1 whole lemon (juiced)
- 1 whole avocado, sliced
- 2 cups fresh greens (arugula or mixed)

Mix ground beef with cumin, 1 tsp salt, and 0.5 tsp pepper. Divide into 2 portions and mold onto metal skewers into long, flat patties.

Toss peppers and onion with 2 tbsp oil, salt, and pepper. Spread on a sheet pan with the beef skewers.

Broil 4 inches from heat for 12–15 minutes, stirring vegetables halfway, until beef is charred and cooked through.

While kebabs cook, whisk tahini with lemon juice, 3 tbsp water, 0.5 tsp salt, and minced garlic until smooth and pourable.

Divide greens between two bowls. Top with beef skewers, grilled vegetables, and avocado slices.
