Ingredients
- 1.5 lbs beef short ribs (asado de tira), thin-cut
- 1 tsp salt
- ½ tsp black pepper
- 4 cloves garlic, minced
- ¼ cup olive oil
- ¼ cup fresh parsley, chopped

Pat the ribs dry with paper towels. Season all sides generously with salt and pepper.

Heat a cast iron skillet over high heat until smoking, about 2 minutes.

Lay ribs flat in the hot pan without moving them. Sear 2 minutes until edges are deeply charred.

Flip once and sear the other side 2 minutes. Meat should feel firm but have give when pressed.

Transfer ribs to a warm plate. Reduce heat to medium and add garlic to the same skillet.

Toast garlic 30 seconds, then pour in olive oil and remove from heat. Stir in parsley.

Drizzle the garlic oil over the ribs. Rest for 2 minutes, then serve.
