Ingredients

  • 1.5 lbs beef short ribs (asado de tira), 1.5–2 inches thick
  • 3 cloves garlic cloves, minced
  • ¼ cup fresh parsley, chopped (optional garnish)

Instructions

  1. 1

Pat ribs dry with paper towels. Season generously on both sides with salt and black pepper.

  2. 2

Heat a heavy skillet or grill pan over medium-high until it smokes, ~2 minutes.

  3. 3

Sear ribs 2 minutes per side without moving — they should have a dark crust and sizzle loudly.

  4. 4

Lower heat to medium. Scatter minced garlic around the ribs and cook until fragrant, ~90 seconds.

  5. 5

Transfer skillet to a 400°F oven (or finish on indirect grill heat) for 3–4 minutes until ribs reach 130°F internal temp.

  6. 6

Rest 2 minutes. Plate and finish with a squeeze of lemon juice and fresh parsley if desired. Serve immediately.
