Ingredients
- 1.5 lbs beef short ribs (asado de tira), 1.5–2 inches thick
- 3 cloves garlic cloves, minced
- ¼ cup fresh parsley, chopped (optional garnish)

Pat ribs dry with paper towels. Season generously on both sides with salt and black pepper.

Heat a heavy skillet or grill pan over medium-high until it smokes, ~2 minutes.

Sear ribs 2 minutes per side without moving — they should have a dark crust and sizzle loudly.

Lower heat to medium. Scatter minced garlic around the ribs and cook until fragrant, ~90 seconds.
