Ingredients

  • ¾ cup all-purpose flour
  • 3 tbsp butter
  • ½ cup granulated sugar
  • 1 whole egg yolk
  • 4 whole brioche or milk bread rolls (or burger buns)
  • 1 cup char siu (Chinese BBQ pork) or rotisserie pork, chopped
  • 2 tbsp hoisin sauce or oyster sauce

Instructions

    Mix flour, sugar, softened butter, and egg yolk in a bowl until a dough forms. Knead 1 minute until smooth.

    Divide pineapple dough into 4 balls. Flatten each and press onto the top of a brioche roll, stretching gently.

    Score the pineapple topping in a crosshatch pattern with a knife. Place rolls on a baking sheet lined with parchment.

    Bake at 400°F for 12–15 minutes until the topping is golden and crackled, and the base is lightly browned.
