Ingredients

  • 8 oz penne pasta
  • 1 lb large shrimp, peeled & deveined
  • ¾ cup heavy cream
  • 2 tsp cajun seasoning
  • 1 cup sauerkraut, drained
  • 1 whole lemon (zested & halved)

Instructions

  1. 1

Boil penne in salted water until al dente, ~9 minutes. Reserve 1/2 cup pasta water before draining.

  2. 2

Heat 2 tbsp olive oil in a large skillet over medium-high. Add shrimp with cajun seasoning and cook 2 minutes per side until edges turn pink.

  3. 3

Pour cream into the skillet. Add lemon zest and 3 minced garlic cloves. Stir until sauce simmers, ~2 minutes.

  4. 4

Add cooked penne and sauerkraut to the skillet. Toss until coated, loosening with reserved pasta water if needed.

  5. 5
