Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp cold butter, cubed
  • ¾ cup buttermilk
  • 3 tbsp granulated sugar
  • ½ cup clotted cream or whipped cream
  • ½ cup jam (strawberry or raspberry)
  • 1 cup fresh strawberries

Instructions

  1. 1

Preheat oven to 425°F. Mix flour, sugar, salt, and 1 tsp baking powder in a bowl.

  2. 2

Cut cold butter into flour mixture with your fingertips until it looks like coarse breadcrumbs.

  3. 3

Stir in buttermilk until a shaggy dough forms; don't overwork it.

  4. 4

Turn dough onto a floured surface and gently pat into a 1-inch-thick disk. Cut into 8 wedges.

  5. 5

Arrange scones on a baking sheet. Bake for 12-14 minutes until golden and edges pull away cleanly.

  6. 6

Serve warm scones with clotted cream, jam, fresh strawberries, and butter cubes on the side.
