  • 24 oz cream cheese
  • 1 cup sugar
  • 4 large eggs
  • 1.5 cups heavy cream
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ½ cup sugar
  • ¼ cup heavy cream

    Preheat the oven to 400°F (200°C). Line a 9-inch springform pan with parchment paper, crumpling it first for a rustic look.

    In a large bowl, beat the 24 oz cream cheese and 1 cup sugar until smooth. Add the 4 eggs one at a time, beating well after each.

    Stir in the 1.5 cups heavy cream, 2 tbsp flour, and 0.5 tsp salt until just combined. Pour the batter into the prepared pan.

    Bake for 35-40 minutes, until the top is deeply browned and the center is still jiggly. Let cool completely in the pan.

    For the caramel, heat 0.5 cup sugar in a saucepan over medium heat, swirling occasionally, until melted and amber, about 5-7 minutes.

    Carefully whisk in 0.25 cup heavy cream (it will bubble) and cook for 1 minute until smooth. Let cool slightly.
