  • 4 links bratwurst
  • 1.5 lb potatoes
  • 1 medium yellow onion
  • 3 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 2 tbsp whole grain mustard

    Boil the 1.5 lb potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly, then slice into 1/4-inch rounds.

    While potatoes cook, grill the 4 bratwurst over medium-high heat, turning often, until browned and cooked through, about 10 minutes. They should feel firm and reach 160°F.
