Ingredients

  • 1 lb pork belly
  • 1 lb potatoes
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1.5 cups water
  • ¼ cup cilantro

Instructions

    Cut the 1 lb pork belly into 1-inch cubes and the 1 lb potatoes into similar-sized chunks. Pat the pork dry with paper towels.

    Heat a large skillet or pot over medium-high heat. Add the pork belly and sear until browned on all sides, about 5 minutes. Pour off excess fat if desired.

    Add the 3 tbsp soy sauce, 2 tbsp brown sugar, and 1.5 cups water. Stir to combine, scraping up any browned bits. Bring to a boil.

    Add the potatoes, reduce heat to medium-low, and cover. Simmer until pork is tender and potatoes are fork-tender, about 15 minutes. Uncover and cook 2-3 minutes more if sauce needs thickening.
