Ingredients
- 2 lb oxtail
- 2 cups beef broth
- 2 medium carrot
- 1 cup green beans
- 1 head broccoli
- 2 tbsp soy sauce

Season the 2 lb oxtail with salt and pepper. Heat 1 tbsp oil in a large pot over medium-high and brown the oxtail on all sides, about 8 minutes total.

Add the 2 cups beef broth and 2 tbsp soy sauce. Bring to a boil, then reduce heat to low, cover, and simmer until the meat is tender, about 1.5 hours.
