- 1 lb beef stew meat
- 2 cups green cabbage
- 2 medium carrots
- 1 cup broccoli florets
- 1 cup corn kernels
- 2 tbsp olive oil

Heat 1 tbsp olive oil in a large skillet over medium-high. Add 1 lb beef stew meat and cook until browned on all sides, about 5 minutes.

Add 1 cup broccoli florets and 1 cup corn kernels to the skillet. Pour in 1/2 cup water, cover, and simmer until beef is tender and broccoli is bright green, about 10 minutes.

While beef cooks, shred 2 cups cabbage and grate 2 carrots. Toss with remaining 1 tbsp olive oil and a pinch of salt.
