- 2 tablespoons olive oil
- 1 medium onion
- 1 cup beef broth
- 2 sprigs fresh rosemary
- 1 teaspoon salt

Pat the 2 lb beef short ribs dry and season all over with the 1 tsp salt. Heat the 2 tbsp olive oil in a large pot over medium-high until shimmering, about 2 minutes.

Add the ribs in a single layer (work in batches if needed) and sear until deeply browned on all sides, about 8 minutes total. Transfer to a plate.

Reduce heat to medium, add the 1 sliced onion, and cook until soft and golden, about 5 minutes, scraping up any browned bits.

Return the ribs to the pot, pour in the 1 cup beef broth, and add the 2 rosemary sprigs. Bring to a simmer, then cover and cook until the meat is fork-tender, about 10 minutes.
