Ingredients

  • 1 lb lamb leg or shoulder
  • 4 large lettuce leaves
  • 3 whole dried red dates
  • 1 inch ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp salt

Instructions

    Place the 1 lb lamb, 3 dried red dates, and 1 inch sliced ginger in a pot. Cover with water by 2 inches and bring to a boil over high heat, about 10 minutes.

    Reduce heat to low, skim off any foam, and simmer gently until the lamb is tender and easily pierced with a fork, about 30 minutes. Add 1 tsp salt in the last 5 minutes.

    Remove the lamb from the pot and let it rest for 5 minutes. Meanwhile, arrange the 4 large lettuce leaves on a serving plate.

    Slice the lamb thinly against the grain and arrange the slices over the lettuce.

    In a small bowl, mix 3 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sesame oil. Serve the sauce alongside the lamb for dipping.
