Ingredients
- ½ cup tapioca pearls
- ¼ cup brown sugar
- 2 bags black tea
- 1 cup milk
- 4 cups water
Instructions
- 1
Bring 4 cups water to a boil in a medium pot. Add 1/2 cup tapioca pearls and stir gently. Cook over medium-high heat, stirring occasionally, until pearls float and are tender, about 15 minutes.
- 2
Drain the pearls and rinse with cold water. In the same pot, combine 1/4 cup brown sugar and 1/4 cup water. Heat over medium, stirring, until sugar dissolves and syrup thickens slightly, about 3 minutes.
- 3
Add the cooked pearls to the syrup and let them soak for 10 minutes, stirring once or twice, so they absorb the sweet flavor.
- 4
Meanwhile, steep 2 black tea bags in 1 cup hot water for 5 minutes. Remove the bags and let the tea cool to room temperature.
- 5
Divide the syrup-coated pearls between two glasses. Add 1/2 cup tea and 1/2 cup milk to each glass. Stir well and serve with a wide straw.
- 6
For extra richness, use whole milk or add a splash of cream. Adjust sweetness by adding more brown sugar syrup if desired.
