Ingredients

  • 1 medium bitter melon
  • 8 oz pork (thinly sliced)
  • 1 small red chili pepper
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • ½ tsp salt

    Cut the 1 medium bitter melon in half lengthwise, scoop out the seeds, and slice into 1/4 inch half-moons. Toss with 0.5 tsp salt and let sit for 10 minutes, then rinse and pat dry.

    Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add the 8 oz sliced pork and stir-fry until browned and cooked through, about 3-4 minutes.

    Add the sliced bitter melon and 1 small red chili pepper (thinly sliced) to the pan. Stir-fry for 2-3 minutes until the melon is tender-crisp and slightly charred.

    Pour in 2 tbsp soy sauce and stir-fry for another minute, letting the sauce coat everything. Serve hot.
