Ingredients

  • 1.25 lb beef sirloin or flank steak
  • 8 count corn tortillas
  • ½ medium yellow onion
  • ¼ cup fresh cilantro, chopped
  • 2 count lime
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper

    Slice beef against the grain into 1/4-inch-thick strips. Pat dry with paper towels.

    Dice onion into small pieces. Place on a serving plate with cilantro and lime wedges.

    Wrap tortillas in foil and warm in a 300°F oven or directly over a gas flame for 30 seconds per side.

    Heat oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 90 seconds.

    Working in two batches, sear beef 45 seconds per side without stirring. Edges should char; do not crowd the pan.

    Transfer cooked beef to a plate. Season with salt and pepper.

    Layer beef into warm tortillas. Top with onion, cilantro, and a squeeze of fresh lime. Serve immediately.
