- 1 cup heavy cream
- ¼ cup sugar
- 1 cup fresh strawberries
- ½ cup red currants
- 4 leaves mint leaves

In a blender, puree the 1.5 cups frozen mixed berries until smooth. Strain through a fine mesh sieve to remove seeds, pressing with a spatula to extract as much puree as possible.

In a large bowl, beat the 1 cup heavy cream and 0.25 cup sugar with an electric mixer until stiff peaks form, about 3-4 minutes. The cream should hold its shape when the beaters are lifted.
