Ingredients
- 4 medium beets
- 4 cups arugula
- 4 oz goat cheese
- 3 tbsp olive oil
- 2 tbsp fresh herbs (such as parsley or dill)
- ½ tsp salt
- ¼ tsp black pepper

Preheat oven to 400°F. Wrap the 4 beets in foil and roast until fork-tender, about 45 minutes. Let cool slightly, then peel and slice into wedges.
