Ingredients
- 3 medium cooked beets
- 2 medium orange
- ½ small red onion
- ¼ cup toasted almonds
- 2 tablespoons olive oil
- ¼ teaspoon salt

Slice the 3 cooked beets into thin rounds and place them in a large bowl. Peel and segment the 2 oranges over the bowl to catch the juice, adding the segments to the beets.

Thinly slice the 0.5 small red onion and add to the bowl along with the 2 tbsp olive oil and 0.25 tsp salt. Toss gently to combine.
