Ingredients
- ½ lb beef sirloin, thinly sliced
- 3 tbsp soy sauce
- 8 oz cooked noodles (lo mein or spaghetti)
- 1 medium carrot, julienned
- 1 medium red bell pepper, sliced
- 4 oz snow peas
- 3 stalks green onions, sliced
- 2 tbsp vegetable oil

In a bowl, toss the 0.5 lb beef with 1 tbsp soy sauce and let marinate for 10 minutes while you prep vegetables.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat until shimmering. Add the beef in a single layer and cook without stirring for 1-2 minutes until browned, then stir-fry for another 1-2 minutes until just cooked through. Remove beef to a plate.

Add the remaining 1 tbsp oil to the skillet. Add the 1 julienned carrot, 1 sliced bell pepper, and 4 oz snow peas. Stir-fry over high heat until crisp-tender, about 3-4 minutes.

Add the 8 oz cooked noodles and the remaining 2 tbsp soy sauce. Toss everything together for 2-3 minutes until noodles are heated through and coated.

Return the beef to the skillet, add the 3 sliced green onions, and toss for 1 minute until everything is combined and hot. Serve immediately.
