Ingredients

  • 1 lb beef stew meat
  • 1 medium onion
  • 1 medium red bell pepper
  • 15 oz canned diced tomatoes
  • 2 cups instant rice
  • 2 cups frozen french fries

Instructions

    Season the 1 lb beef stew meat with salt and pepper. Heat 1 tbsp oil in a large pot over medium-high and brown the beef on all sides, about 5 minutes.

    Add the 1 sliced onion and 1 chopped red bell pepper to the pot. Cook until softened, about 4 minutes.

    Pour in the 15 oz diced tomatoes with their juices. Bring to a simmer, then reduce heat to low, cover, and cook until the beef is tender, about 15 minutes.

    Meanwhile, cook the 2 cups instant rice according to package directions. Bake the 2 cups frozen french fries according to package directions until crispy.

    Serve the beef stew over the rice with the french fries on the side. Garnish with chopped green onion if desired.
