Beef Bibimbap

Ingredients
- 2 cups cooked short-grain white rice
- ½ lb beef sirloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp minced garlic
- ½ tsp sugar
- 1.5 cups spinach, fresh
- 1 cup shiitake mushrooms, sliced
- 1 medium zucchini, julienned
- 1 medium carrot, julienned
- ½ tsp soy sauce
- 1 tsp minced garlic
- ½ tbsp sesame oil
- 2 whole eggs
- 2 tbsp gochujang paste
- 1 tbsp water
- ½ tsp sesame oil
- 1 tsp toasted sesame seeds
- 1 tbsp green onion, sliced

In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp sesame oil, 2 tsp garlic, and 0.5 tsp sugar. Add beef slices and marinate for 10 minutes.

In separate small bowls, combine soy sauce, garlic, and sesame oil for seasoning vegetables.

Prepare all vegetables by cleaning, slicing, and julienning as specified.

Heat 0.5 tbsp sesame oil in a large skillet over medium-high heat. Add spinach with 0.5 tsp soy sauce and 0.5 tsp garlic. Cook for 2 minutes until wilted. Transfer to a plate.

In the same skillet, sauté mushrooms for 3-4 minutes until golden. Season with pinch of soy sauce. Transfer to plate.

Sauté zucchini for 2 minutes until tender-crisp. Season lightly. Transfer to plate.

Sauté carrots for 2 minutes. Transfer to plate.

In a clean skillet, cook marinated beef over medium-high heat for 2-3 minutes per side until browned. Transfer to plate.

In the same skillet, fry eggs sunny-side up until whites are set, about 3-4 minutes.

In a small bowl, mix gochujang paste with 1 tbsp water and 0.5 tsp sesame oil until smooth.

Divide warm rice between two bowls. Arrange cooked beef and all vegetables on top of rice in sections.

Top each bowl with a fried egg in the center.

Drizzle gochujang sauce over the top. Sprinkle with toasted sesame seeds and green onions.
