Ingredients
- 2 medium potatoes
- 8 oz beef sirloin
- 1 small onion
- 2 large eggs
- 2 tbsp olive oil
- ½ tsp salt

Dice the 2 potatoes into 1/2-inch cubes and the 1 small onion into thin wedges. Heat 1 tbsp olive oil in a large skillet over medium-high.

Add the potatoes and onion to the skillet, season with 1/4 tsp salt, and cook, stirring occasionally, until golden and tender, about 10 minutes.

Cut the 8 oz beef into bite-size cubes and season with the remaining 1/4 tsp salt. Push potatoes to one side, add 1 tbsp olive oil and the beef, and cook until browned but still pink inside, about 4 minutes.

In a separate small pan, fry the 2 eggs sunny-side up until the whites are set but yolks are runny, about 2 minutes.
