- 2 medium baked potatoes
- 4 tbsp barbecue sauce
- 1 cup shredded cheddar cheese
- ½ cup bacon bits
- 2 medium radishes
- 2 tbsp fresh cilantro

Preheat oven to 400°F. Pierce the 2 baked potatoes with a fork and microwave on high for 5 minutes, then transfer to a baking sheet and bake for 10 minutes until skins are crisp and insides are tender when pierced.

Slice the 2 radishes thinly and chop the 2 tbsp cilantro. Set aside.

Cut a slit in each hot potato and fluff the flesh with a fork. Drizzle 2 tbsp barbecue sauce over each potato, then sprinkle with 1/2 cup cheddar cheese and 1/4 cup bacon bits per potato.

Return potatoes to the oven for 3-5 minutes until the cheese is melted and bubbly. Top with radish slices and cilantro before serving.
