Ingredients

  • 3 medium ripe bananas
  • 2 large eggs
  • ¾ cup brown sugar
  • 1.5 cups all-purpose flour
  • ½ cup butter
  • ¾ cup semi-sweet chocolate chips
  • 1 teaspoon baking soda
  • ½ teaspoon salt

    Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

    In a large bowl, mash the 3 ripe bananas with a fork until mostly smooth. Add the 2 eggs and 1/2 cup melted butter, and stir until combined.

    Mix in the 3/4 cup brown sugar, 1/2 teaspoon salt, and 1 teaspoon baking soda until well blended.

    Gently fold in the 1.5 cups flour and 3/4 cup chocolate chips until just combined; do not overmix—a few streaks of flour are fine.
