Ingredients
- 4 filets salmon fillets
- 1.5 lb potatoes
- 2 medium onions
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 stalks green onions

Preheat oven to 400°F. Slice 1.5 lb potatoes into 1/4-inch rounds and 2 onions into thin wedges.

On a large baking sheet, toss potatoes and onions with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread in an even layer.

Roast for 20 minutes, until potatoes are nearly tender and starting to brown at edges.

Pat 4 salmon fillets dry. Rub with remaining 1 tbsp oil, 1/2 tsp salt, and 1/4 tsp pepper.
