Ingredients

  • 4 filets salmon fillets
  • 1.5 lb potatoes
  • 2 medium onions
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 stalks green onions

Instructions

  1. 1

Preheat oven to 400°F. Slice 1.5 lb potatoes into 1/4-inch rounds and 2 onions into thin wedges.

  2. 2

On a large baking sheet, toss potatoes and onions with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread in an even layer.

  3. 3

Roast for 20 minutes, until potatoes are nearly tender and starting to brown at edges.

  4. 4

Pat 4 salmon fillets dry. Rub with remaining 1 tbsp oil, 1/2 tsp salt, and 1/4 tsp pepper.

  5. 5

Push vegetables to the sides, place salmon in the center, skin-side down. Roast 12-15 minutes, until salmon flakes easily and potatoes are golden.

  6. 6

Sprinkle with sliced green onions and serve hot.
