- 2 fillets salmon fillets
- 4 cups mixed vegetables (baby corn, carrots, green beans, broccoli, cauliflower, cherry tomatoes)
- 3 tbsp olive oil
- 1 whole lemon
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 425°F. On a large baking sheet, toss the 4 cups mixed vegetables with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread in a single layer.

Roast the vegetables for 10 minutes, until they start to soften and brown at the edges.

Push vegetables to the sides, place the 2 salmon fillets in the center. Drizzle with remaining 1 tbsp olive oil, sprinkle with remaining 1/2 tsp salt and 1/4 tsp pepper.

Bake for 12-15 minutes, until salmon is opaque and flakes easily with a fork, and vegetables are tender.

Slice the lemon into wedges and serve with the salmon and vegetables, garnished with fresh parsley if desired.
