Baked Mediterranean Fish with Tomatoes and Herbs

Ingredients
- 1 whole (about 1.5 lb) whole fish (such as sea bass or trout), cleaned
- 2 cups cherry tomatoes
- ½ cup kalamata olives
- 1 whole lemon
- ¼ cup fresh basil leaves
- ¼ cup fresh parsley
- 3 tbsp olive oil
- 1 to taste salt and black pepper

Preheat oven to 400°F. Pat the 1 whole fish dry with paper towels and season inside and out with salt and pepper.

Place the fish in a baking dish. Scatter 2 cups cherry tomatoes and 1/2 cup olives around it. Drizzle everything with 3 tbsp olive oil.

Slice 1 lemon into rounds and tuck half the slices inside the fish cavity, along with a few basil leaves. Lay the remaining lemon slices over the fish.

Bake for 25-30 minutes, until the fish flakes easily with a fork and the tomatoes are bursting and juicy.

Remove from oven and scatter the remaining basil and 1/4 cup parsley over the top. Serve hot with crusty bread to soak up the juices.
