Ingredients
- 4 fillets white fish fillets
- 2 medium potatoes
- 2 medium carrots
- 2 cups green beans
- 3 tbsp olive oil
- 1 whole lemon
- 2 tbsp parsley
- 1 to taste salt and pepper

Preheat oven to 400°F (200°C). Slice 2 medium potatoes and 2 carrots into thin rounds; trim 2 cups green beans.

On a large baking sheet, toss the potatoes, carrots, and green beans with 2 tbsp olive oil, salt, and pepper. Spread in a single layer and roast for 15 minutes.

Pat 4 fish fillets dry and brush with remaining 1 tbsp olive oil; season with salt and pepper.

Push vegetables to the sides of the sheet, place fish in the center, and bake until fish flakes easily with a fork, about 12-15 minutes.
